For The Hoxton we’re looking for an Assistant Director of Food & Beverage with energy and charm to join our team. Reporting to the General Manager and with a dotted line to the VP Food & Beverage, you will be responsible for all F&B operations throughout the hotel.

Lotti's is our buzzing neighbourhood restaurant. The menu features an internationally inspired brasserie style cuisine with fresh, locally sourced ingredients. During the day, Lotti's is a place to meet, relax or work, and from Friday to Sunday the bar plays host to local DJ talent.

Once the Mayor’s home, now our home, on Amsterdam’s Herengracht canal. The Hoxton, Amsterdam houses 111 rooms, The Apartment, our meetings & events concept, and our all-day restaurant & bar, Lotti’s.

What you'll do...

  • You’ll lead your team by example, keeping them involved and motivated; helping them feel empowered and supported, confident in providing top experiences for our guests and comfortable turning to you for leadership. 

  • Set the brand standards for the bar, restaurant, lounge and lobby 

  • Recruit, lead, train and motivate the R&B team in delivering exceptional service, helping them improve their skills and providing support for career development. 

  • Guarantee the respect of procedures governing cash operations, administration and audits, in line with the hotel policy. 

  • Maintain high standards of quality control, hygiene, and health and safety. 

  • Both guest and team experience will be at the heart of all you do for Lotti’s, Lotti’s Bar as well as the lobby all day dining area, Room Service and The Apartment – our unique meetings and events concept. 

  • Drive revenue through well planned initiatives and incentives, alongside a strong understanding of guest bookings. 

  • Supporting the sales drive and maximise profits whilst controlling operational expenses. 

  • Support the department heads in controlling the operational costs and payroll, always striving to find efficient solutions whilst keeping the quality high and the experience top notch. 

  • Work closely with Director of F&B and Head Chef so that front of house and back of house are working smoothly, hand-in-hand. 

  • Organise onboarding for new team members and continuous development opportunities. 

  • Work with the whole F&B team to ensure proper food presentation and proper food-handling procedures. 

  • Know your product and systems inside out. 

  • Perform regular inspection of food and beverage preparation and presentation and maintain inventory to enhance sales. 

  • Control all equipment in the bar to ensure full par stocks 

  • Supervise stock rotations for the soft and alcoholic drinks and catering supplies. 

  • Run monthly the inventory, analyses beverages ratios results and optimize the target.

  • 2+ years’ experience in a similar food and beverage management/director role, either across multiple sites or a single £5m+ revenue per year business.

  • Multi departmental budgeting and forecasting experience; a clear understanding of the financial expectations of a successful restaurant and bar business.

  • An ability to manage the budget on a daily, weekly and monthly basis. You’ll be expected to report results with a granular understanding of the ongoing trends of the business.

  • A track record of leading large teams in restaurants, kitchens and bars; you’re a natural at inspiring trust and bringing others along on a journey.

  • Exceptional attention to detail in a fast-paced environment, juggling many things at once, but always dotting the i’s and crossing the t’s.
