As Chef de Cuisine of BlueBlood, you are more than a foodie. You are ready to become the ultimate Nikkei flavor master of the BlueBlood Kitchen. Together with your high culinary standards, you will be challenged to share and inspire. Lead the BlueBlood kitchen team and ensures compliance with all Food & Beverage policies according to Hilton’s high HACCP standards and procedures.
Produces superior quality dishes, presentations and flavors.
Responsible for menu engineering and be the creative mind and expert behind all the BlueBlood dishes.
Test foods to ensure proper preparation and temperature
Manages purchasing, staffing and oversees all the food preparation
Train the team to develop their culinary skills with a focus on the Nikkei cuisine
Managing the team by taking care of team member requests and conducting performance reviews.
Sets and supports the achievement of kitchen targets including budgets
Provides information to supervisors, co-workers, and team members by telephone, in writing and/or in person
The blood type we are looking for:
Previous experience as Chef de Cuisine with at least 2-3 years of provable experience in the upscale Nikkei cuisine.
Must have extensive knowledge about Nikkei sushi, meat and seafood preparations according to the Nikkei cuisine
Great teamwork skills and attention to detail and you preferably have led a team of at least 10 team members
Positive outlook and outgoing personality, you enjoy guest contact and menu explanation at the table.
Serving as a role model to demonstrate appropriate behaviors
Analyzes information and evaluating results to choose the best solution and solve problems.
