The hotel has 250 rooms and is located in the 'Hart van Zuid', a stone's throw from the Rotterdam Ahoy Convention Center and the Zuidplein. The restaurant and terrace with a view over the Zuiderpark will become the Italian hotspot of Rotterdam South with freshly prepared Neapolitan Sourdough Pizzas and Italian inspired cocktails. The restaurant offers 175 seats. The expected opening of the hotel is September 2023.
 
This is a semi-managerial position where you prepare dishes that are on the menu. With all the skills you have already developed in the field of cooking, you stimulate and train your kitchen team. You work under the direction of the chef. You ensure that every dish leaves the kitchen at a good pace and in a consistent manner. In addition, you are jointly responsible for stock management, development of the kitchen staff and you come up with new dishes together with the chef considering the intended food cost.
 
Job description
Your duties and responsibilities include:

  • Preparing the mise-en-place for breakfast, lunch and dinner;

  • Preparing the breakfast buffet and all dishes on the menu in accordance with the menu item sheets;

  • Keeping the working environment clean and preventing cross-contamination;

  • Making an inventory of the required products and placing the order;

  • Help put away delivered orders in accordance with FiFo;

  • Monitor stock management;

  • Identifying and reporting problems in the kitchen (maintenance, hygiene, etc);

  • Working according to HACCP procedures;

  • Motivating and enthusing the kitchen team;

Inventing and developing new dishes in consultation with the chef, taking into account the food cost.

Job requirements

  • You already have several years of experience as an independent cook;

  • You have good knowledge of HACCP and Allergen legislation;

  • You are proactive and stress-resistant;

  • You speak Dutch or English;

  • You live in the vicinity of the hotel;

  • You are flexible (Monday-Sunday).
